Mexican Chicken Burgers
35 Minutes. Serves 4. Suitable for adults and children
Ingredients
1 Lettuce
1 Red Onion
1 Red Pepper
2 Tomatoes
Tomato Sauce
Large Bloomer loaf (or similar very large loaf)
5 skinless Chicken Breasts
1 packet Schwartz Chicken Fajita recipe mix (hot spicy seasoning mix with cumin and chillies)
Pepper
Preparation (Previous Day)
Wash chicken breasts and coat with fajita mix. 1/3 on bottom, 2/3 on top.
Leave in Fridge.
Preparation
Cook chicken breasts on a flat 'chip' tray for 35 minutes at 200 degrees.
While cooking:
slice red onion
slice tomatoes
slice red pepper
wash lettuce and seperate into leaves
slice bread into 8 large thick slices
At 30 minutes
'butter' all 8 slices of bread with a thick layer of mayonnaise.
add bed of lettuce leaves
Add chicken breast ( 1 each. 2 for dad)
garnish with red onion, red pepper, sliced tomato, tomato sauce as reqd
sprinkle ground pepper on if reqd.
Serve. Eat with knife and fork.
Optional
Use fingers.
Serve up one portion of chips divided between 4 people as a garnish. meal is filling so chips not necessary.
